Can’t believe it is this time of week again. Usually I post my last Wednesday eats but after my camera failed on Holiday I am going to post Mondays eats.
For breakfast I decided on a green smoothie for breakfast (that is not green!). It was too thick but lovely and I really enjoyed it. I made it with some soaked oats in skimmed milk, half frozen banana, frozen berries, baby spinach and more milk. It was a little to thick for my liking but keep me feeling satisfied all morning. I did have a banana before my lunch time run.
Before lunch I went for a 3.2 mile run and was really worried how I would manage as I didn’t run during my week off but hiked some great paths. For the first time in a long time I really enjoyed it and it was not as hard as it had been. I had missed running last week but think the week off didn’t do me any harm. Once I got back I had lunch which was a lovely salad made with courgette/zucchini noodle, shredded carrot, various tasty salad and half a tin of chickpeas. I also added some fresh mint from my garden and it really enhanced the flavour of the salad. I will definitely add it again.
Mid-afternoon I had a little pot of hummus with carrot and celery sticks. It was just what I needed.
It was my little sister’s birthday on Monday so I made a quick dinner of Cottage Cheese and Potato Bake.
It is so easy to make.
Slice 300g of new potatoes (jersey royals are my fav)
Finely slice ½ onion
Chop into small pieces any other veg that you like, I added Asparagus but you could add peppers or mushrooms)
150g low fat Cottage cheese
Preheat the oven at about 200 degrees. Cook the potato slices until just cooked (about 10 minutes), once cooked drain and set aside. Fry all the veg until is soft (if you are short of time then you don’t have to cook the veg first but it does taste better if cooked first). Mix the cottage cheese and eggs together in a bowl. In a solid flan tin that the veg and cooked potato, pour in the egg and cottage cheese mix and mix it all together. Put in the oven for about 25 minutes until the top is golden and the mixture set.
I usually have a quarter and keep a quarter for lunch the next day. It is really nice cold and makes a great picnic filler.
I realised that at the beginning of the week I forgot to add my fitness aims for the week. I plan on running every lunch time I can at work. The weather is so bad here in England that we can only go weather permitting. I am going to spinning tonight (and can not wait) which I love. I really get a high from spinning and wish I had got back into it before now. After my fab fun week in the Lake District watching the cyclists and hikers it has really made me want to get fitter and stronger.
